It is mostly black, like nightmares, and sticky, like the floor at a teenager’s party. It tastes of grass clippings. The service we received while dining was excellent from beginning to end, although I must say at...times we felt that there were too many different servers flocking our table. I came so close to sending the dish back but didn’t want to cause a scene, now regretting that I didn’t. It’s a long process, like craftsman’s work. After the fabulous years at Ledoyen, Christian Le Squer is now at the helm of this renowned establishment. I ask the waitress what the green stuff is. It was an unforgettable experience.
